Finally, I prepared it yesterday and it was amazing! But this Ennegayi veg recipe can also be had with rotis or even some hot steamed rice!!

Ennegayi Veg Recipes Ingredients:


•        8 small pink colored eggplants
•        1.5 tbsp Oil
•        1 tsp Mustard seeds
•        A strand of curry leaves
•        A beneficent pinch of Asafetida
•        1 onion reduce finely
•        Salt as in step with taste


How to make Ennegayi Veg Recipes:


1.       Dry roast the coriander seeds, jeera, red chilies, cloves, cinnamon, until and peanuts until the peanuts begin popping a little (make certain not one of the spices are over roasted)
2.       Grind the roasted spices with coconut, onion, tamarind, and salt; Add simply enough water to make it a coarse paste; Keep aside.
