Here is an easy food recipe with step by step process to make attractive Mini Ghevar. Decorate them with creamy rabri and nutty dry fruits for a mouth drooling familiarity. Enjoy.

Ingredients


  • Refined flour - 2 cup (250 gms)
  • Ghee ¼ cup (60 gms)
  • Milk - ½ cup
  • Sugar - 1 cup (250 gms)
  • Green Cardamom - 5 to 6 (powder)
  • Saffron Strands - 15 to 20
  • Almonds - 8 to 10 (finely chopped)
  • Pistachios - 10 to 15 (finely chopped)
  • Ghee - For frying
  • Rabri - 250 gms


Instructions:


  1. Take 2 cups refined flour in a mixing bowl. Take ½ cup milk, ¼ cup ghee, ¼ cup chilled water put in the mixer jar and combine well. Then add superior flour and water in small portions to make a batter.
  2. Whisk for 3 to 4 minutes to make it of pouring regularity. Pour the hammer into a bowl. grip juice from 1 lemon adds it to the batter.
  3. Take 15 to 20 saffron strands of saffron in a small sink. Add a little water to it.

Gatte Ka Pulao Veg Recipe:


After visiting the Food connoisseur of Punjab, let’s visit the Desert region of Rajasthan. It is aptly named as the land of Kings as historically there were numerous kings who ruled that region.

The Rajasthan cooking has been influenced by the lifestyle of the people and the ingredients available in the desert regions. So their food is such that can last several days without the need for heating.

This Gatte Ka Pulao is on similar lines with the Gatte being made well in advance and used in the pulao. We found the pulao to be very flavorful and spicy and therefore enjoyable. The kids had some trouble taking in so much of spice!  

Ingredients- 

For the Gattes-
Besan/Chick Pea Flour 1 cup
Chilli Powder 1/2 tsp or as needed 
Salt to taste
Fennel Seeds/Saunf 1 tsp
Carom Seeds/ ajwain 1/2 tsp 
Yogurt/curds 1 tbsp 
Oil 2 Tbp 

Method:

In a mixing bowl add all the ingredients listed under 'for the gattes' and knead into stiff dough adding as little water as needed.
Divide the dough into 8-9 portions and shape each portion into 3 inch long cylinders about 2-3 mm thick. 

In a deep stock pot, boil about 4-5 cups of water and after the water comes to a rolling boil, add the dough cylinders and cook for 10-12 minutes.

Coming to this recipe aloo bhujia is a popular savory snack organized for Deepavali festival. 

Aloo bhujia is made with mashed potatoes and gram flour together with some spices. They taste so crunchy and attractive.

Aloo Bhujia Recipe Ingredients:


•           Boiled potato-3
•           Gram flour-one hundred gm
•           Turmeric powder-1/3 tsp
•           Red chili powder-half tsp
•           Garam masala powder-1/3 tsp
•           Asafetida (Hing)-1/four tsp (non-obligatory)
•           Cooking oil for frying
•           Salt to flavor

Aloo Bhujia Recipe Method:


•           Grate/mash/mixture the boiled potato in a bowl.
•       Add gram flour, asafetida, garam masala powder, turmeric powder, pink chili powder and salt to taste.
•       Mix it well and knead it into the dough (add little water if wished).
•          Add little oil into the dough to make it smooth.

Fish (as required)
4 tsp oil

For the green chutney:

Fresh mint leaves
Fresh coriander leaves
Garlic and ginger to taste

For the batter:

2 eggs
250 gm clarified flour Water
Salt to taste

For the sauce:
2 tsp oil
1/2 tsp cumin seeds
10 tsp fresh cream
2 tsp green chutney
Salt to taste

For the main preparation:
•Heat oil in a pan.
•Add cumin seeds and cook them till they start crackling.
